Alluma is the first establishment of Liran Tal, a talented chef from Tel-Aviv. In this author's bistro, he unveils an authentic and instinctive cuisine, deeply rooted in his Israeli heritage. The tasting menu, offered in 6 or 8 courses, varies between weekdays and weekends, providing a unique and refined gastronomic experience. Each dish is meticulously crafted, capturing the essence of Mediterranean flavors with a personal and daring touch.
Chef Liran Tal
What's the story of Chef Liran Tal? He began his career in the bustling bistros of Tel-Aviv before moving to Paris. His journey, marked by experiences in prestigious establishments such as Balagan and Dersou, led him to become the official chef for the Israeli ambassador in France. With Alluma, he fulfills his dream of creating his own restaurant, where he can freely express his culinary vision. His cuisine blends Mediterranean influences, the refinement of French gastronomy, as well as Japanese and Scandinavian inspirations.
An Eclectic and Organic Wine List
Liran Tal has partnered with Emmanuel Delmas, a former sommelier from renowned establishments like Plaza Athénée and Lasserre, to offer a wine list that perfectly complements his cuisine. This selection highlights organic wines that are low in tannins and easy to drink, sourced from French, Spanish, Italian, Armenian, and Greek terroirs. These wines, chosen for their freshness and vitality, harmonize beautifully with Liran Tal's flavorful and textured dishes.
Seasonal and Innovative Cocktails
The team at Alluma also crafts signature cocktails using seasonal ingredients and homemade syrups. Try the Beetroot Martini, a blend of beet-infused vodka, lemon, green apple juice, date syrup, and pepper syrup. The restaurant, spanning 80m², was designed by Nathalie Rozencwajg, founder of Name Architecture. The décor of Alluma centers around a stunning mural, blending Moroccan motifs with Ashkenazi lace.
